As far as I can tell, this is NOT getting a Blu-ray release, and the UHD isn’t a combo. I suspect someone at the studio assumed it already had one and this was just an upgrade like many other other new UHD titles

I don't think they assumed that they already released a BD. I think they assumed that near 100% of the consumers who would buy it on BD are already buying UHD anyway. Turns out they did the same release strategy (straight from DVD to UHD with no BD) for Richard Pryor: Live on the Sunset Strip.

A Knight's Tale (2001) UHD on 5/20/25. The BD is from 2006 so it should be a notable upgrade. One of the better sports movie of the 2000s.

People are starting to get their copies and the runtime difference between the two cuts is only 12 seconds:
Uncut: 1:28:30
Theatrical: 1:28:18

The uncut versions opens in black and white and, according to someone that has it, "just suddenly turns into color in the middle of the graveyard scene."

This set seems to have all the new interviews Gaumont and Studiocanal commissioned for their 4K re-releases of the films in addition to legacy material.

The only strange omission is in the audio. Sony didn’t port over the 5.0 mix for Subway and the new Atmos for The Big Blue.

Atlantis is a great rescue as that is kind of a documentary companion piece to The Big Blue, in that it is just shots of undersea creatures all done to Éric Serra's score. It fits in with those early 90s New Age-y 'screensaver' programmes (like Channel 4's very early morning The Art of Landscape series) that came out in the wake of Koyaanisqatsi.

The 4k restoration that's buried on their website (under "watch at home") links to a 2xblu-ray on Amazon & they have no mention of any UHDs on their website. They're not doing a very good job at promoting their releases.
